Fascinated by fish sauce, he founded ChuBen Fish Sauce, which represented Vietnam at Osaka’s World Food Exhibition 2025. Chef Benoît celebrates tradition through innovation, blending Vietnamese heritage with global influences to create new stories of flavour.
